To create a delicious soup, we need fresh ingredients and a well-honed technique. We start by preparing the vegetables: the onion, carrot, and celery are diced into small cubes so that they cook evenly and integrate harmoniously into the soup. In a skillet or a deep pot, we heat a little oil over medium heat and add the chopped vegetables. We sauté them lightly until the onion becomes translucent and the aromas are released.

Subsequently, we add enough water over the sautéed vegetables to cover them well, and let it simmer over medium heat, covering the pot with a lid. It is important for the vegetables to simmer slowly to allow the flavors to develop. At this stage, we can also add a few peppercorns, which will give the soup a subtle hint of spice.

When the vegetables are almost cooked, it is time to add the bell pepper and the sliced mushrooms. These not only add a rich flavor but also a pleasant texture to the soup. We add ground pepper to taste, adjusting the spices according to personal preferences. The soup should be allowed to simmer on low heat, covered, to retain all the flavors.

If you have chosen to add the stems of the oyster mushrooms, it is good to know that they require a longer cooking time, so be patient for all the ingredients to cook perfectly. In a separate bowl, we prepare the sour cream mixture: we put the egg yolks, sour cream, and crushed garlic. We mix well, ensuring that there are no lumps.

When the soup is cooked, we take a few ladles of the warm broth and slowly pour it over the sour cream mixture, constantly stirring to avoid the eggs from coagulating. Once we achieve a homogeneous consistency, we pour everything into the pot with the soup. This technique will add a delicious creaminess to the final dish.

We let the soup simmer for about 10 more minutes so that all the ingredients blend perfectly. Finally, we adjust the taste with salt and seasoning, being careful not to overdo it, as each ingredient already has its specific flavors. This soup, rich in vegetables and with a refined taste, will surely be appreciated by all who savor it. It can be served hot, alongside a slice of fresh bread, for a complete and comforting meal.

 Ingredients: 1 kg oyster mushrooms, 2 medium onions, 3 medium carrots, 200 g celery, 3 whole pickled bell peppers, approximately 10 cloves of garlic (to taste), 900 ml sour cream, 6 l water, 3 egg yolks, 100 ml oil, salt, vegeta, and ground pepper to taste, a few peppercorns, a bunch of parsley.
