I propose a delicious and quick recipe for an appetizer that can be prepared in just a few moments, perfect for when you have guests or want to treat your family to something special. This recipe is based on a simple yet savory dough that does not require rising, making it ideal for a spontaneous meal.

To start, prepare the necessary ingredients for the dough. You will need 400 g of flour, 200 ml of warm water, 100 ml of olive oil, one teaspoon of salt, and one teaspoon of baking powder. In a large bowl, add the flour and baking powder, mixing them well. In another container, combine the warm water with the oil and salt, mixing until the salt is completely dissolved. Add this liquid mixture to the flour and knead until you obtain a homogeneous dough.

Once you have the dough, roll it out with a rolling pin on a lightly floured surface and then transfer it to the baking tray. Make sure the dough covers the bottom of the tray well and rises slightly on its edges. It is important to mention that, although the dough does not require rising, I have noticed that if you let the dough sit in the tray for 15-20 minutes, it becomes fluffier and bakes evenly, without remaining uncooked in the middle.

While the dough rests, prepare the filling. You can use a varied combination of ingredients depending on personal preferences. For example, mix 200 g of feta cheese, 100 g of sour cream, 2 eggs, 150 g of fresh or frozen spinach (thawed and drained), salt, and pepper to taste. Mix all the ingredients well until you obtain a homogeneous composition, but do not forget to leave some cheese chunks to use at the end.

Once the filling is ready, carefully pour it over the dough in the tray, spreading it evenly for uniform baking. On top, sprinkle sesame seeds, sunflower seeds, or even pine nuts, depending on your preferences. These will add a crunchy texture and delicious taste to the dish.

Preheat the oven to 200 degrees Celsius and place the tray in the oven for about 25-30 minutes or until the dough turns golden and the filling is well baked.
