Cauliflower Meatballs
Cauliflower, a versatile and healthy ingredient, deserves to be highlighted through delicious recipes. We start by breaking the cauliflower into small florets, ensuring it will cook evenly. So, we put the cauliflower florets into a pot of boiling water, adding a teaspoon of salt and a splash of milk. The milk will help enrich the flavor and make the texture of the cauliflower creamier once it is mashed. We boil the cauliflower for about 10-15 minutes or until it becomes soft but not overcooked.
Once the cauliflower is ready, we drain it and let it cool slightly, then we mash it well until we get a fine paste. At this point, we can take care of the green onion. We slice the green onion into thin rings and put it in a pan with a little heated oil. We sauté it over medium heat, stirring constantly, until it becomes translucent and fragrant. This will add an extra layer of flavor to our dish.
Once the onion is ready, we add it to the bowl with the mashed cauliflower. We mix well, infusing the cauliflower with the flavor of the onion, then we add two slices of bread soaked in water and squeezed, beaten eggs, salt, and pepper to taste. It is essential to ensure that all the ingredients are well incorporated. If we notice that the mixture is too soft, we can gradually add breadcrumbs until we achieve the right consistency to form patties.
Using our palms, we form large patties, which we coat in breadcrumbs to achieve a crispy crust. In a deep pan, we heat the oil until it reaches the optimal temperature for frying. We place the patties in the pan, being careful not to overcrowd them, so they fry evenly. We fry them until golden on each side, then remove them to a plate lined with paper towels to absorb excess oil.
These cauliflower patties are not only delicious but also very versatile. They can be served warm, alongside pickles, or as a side dish next to a juicy steak. They are also ideal for a buffet, where they can be enjoyed by all guests. I tried making one patty to check the texture and taste, and the result met my expectations. Surely, these patties will become a favorite in the cold season and beyond!
