1. Start by preparing the pastry. In a large bowl, combine the flour, powdered sugar, salt, and butter. Use your fingers or a pastry blender to incorporate the butter until the mixture is homogeneous and has a crumbly texture. Add the egg and, if desired, the vanilla extract. Gently knead until you obtain a uniform dough.
2. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for about 1 hour. This step will help the dough become easier to roll out and will give it a more tender texture.
3. Meanwhile, prepare the cheese cream. In a separate bowl, mix the cottage cheese (or mascarpone), powdered sugar, egg, lemon zest, and vanilla extract. Make sure everything is well combined and smooth.
4. For the caramelized pears, peel and slice the pears thinly. In a skillet, add the sugar and butter and let them melt over medium heat, stirring constantly to prevent burning.
