Baked Potato Boats

Preparation:
1. Preparing the potatoes: Start by washing the potatoes thoroughly under cold running water, scrubbing them with a brush to remove any impurities. This step is essential as the skin will remain on the potatoes during baking, adding flavor and texture. Preheat the oven to 200°C and place the potatoes on the oven rack. Bake for about 45 minutes or until soft inside. Alternatively, for a quick method, you can microwave them for 8-10 minutes.

2. Preparing the filling: While the potatoes are baking, finely chop the onion. If you choose to add bacon or ham, cut them into small cubes. Heat a skillet over medium heat and add the olive oil.
