Ingredients: Dough - 50 g lard, at room temperature - 15 g salt - 500 g flour - 20 g fresh yeast / 7 g dry yeast - 35 g sugar - 250 g warm water Filling - salami, chopped into small pieces - telemea cheese - grated cheese
To prepare a delicious rolled pastry filled with salami and cheese, it is essential to follow the detailed steps to achieve a perfect dough and a savory filling. Start by preparing the necessary ingredients. Make sure you have lard, salt, sifted flour, fresh yeast, sugar, and lukewarm water on hand. If you are using a bread machine, the order of the ingredients is very important: start by adding the lard, then the salt, the sifted flour, and finally the yeast mixed with sugar that has been dissolved in lukewarm water. Select the dough program and let the machine work its magic.
If you prefer to knead by hand, mix the yeast with the sugar and dilute it with a small amount of lukewarm water. Place the sifted flour in a large bowl, creating a well in the center where you will pour the yeast mixture. Then add the melted lard and salt, gradually mixing with the remaining lukewarm water. Use your hands to knead the dough for about 5 minutes until it becomes smooth and pulls away easily from the bowl and your hands.
Once the dough is ready, shape it into a ball, place it in a bowl covered with plastic wrap, and let it rise in a warm place, away from drafts, for about 2 hours or until it doubles in volume. This step is crucial for achieving a fluffy dough.
Once the dough has risen, sprinkle a little flour on the work surface and roll it out into a rectangular sheet. Make sure the sheet has an even thickness. Evenly distribute the diced salami, crumbled telemea cheese, and grated cheese over the entire surface of the dough. These ingredients will add an intense and savory flavor to the roll. Carefully roll the dough into a tight log, ensuring the ends are well sealed to prevent leaks.
Transfer the roll to a baking tray lined with parchment paper and place it in the preheated oven at 190 degrees Celsius. Bake for about 30 minutes or until the roll is golden and browned. When ready, remove it from the oven and let it cool on a wire rack.
To serve, slice the roll and accompany it with a fresh tomato salad. This combination of textures and flavors will turn any meal into a memorable culinary experience. Enjoy each slice with pleasure!
