Ingredients

*For the dough:*
- 500 g flour
- 25 g fresh yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 3 tablespoons olive oil
- 250-300 ml lukewarm water

*For the filling:*
- 200 g smoked sausage, sliced
- 150 g smoked ham, diced
- 1 can of sliced mushrooms (about 400 g)
- 100 g black olives, pitted
- 500 g cheese, grated
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 medium onion, finely chopped
- Olive oil for sautéing
- 200 g ketchup
- 2 tomatoes, sliced
- 1 teaspoon dried thyme

Instructions

1. Preparing the dough: In a large bowl, dissolve the yeast in lukewarm water. Add the sugar and let the mixture sit for 5-10 minutes until it becomes frothy. This is an indication that the yeast is active. Start adding the flour, salt, and olive oil, mixing with a wooden spoon. When the dough becomes too difficult to mix with the spoon, start kneading it with your hands until it becomes a smooth and elastic dough. This will take about 10 minutes.

2. Letting it rise: Form a ball from the dough and place it in a bowl greased with a little olive oil. Cover the bowl with a damp towel and let it rise in a warm place until it doubles in size, about 1 hour.

3. Preparing the filling: In a pan, add a little olive oil and sauté the onion and bell pepper over medium heat for 5-7 minutes until they become soft. Add the sausage, ham, mushrooms, and olives, mixing well to combine the flavors. Finally, add the minced garlic and thyme, letting everything sauté for another 2-3 minutes.

4. Forming the pizza: After the dough has risen, divide it into two equal parts. Sprinkle a clean surface with flour and roll each piece of dough into a round shape, about 5 mm thick. Do not use oil to roll out the dough, just flour.

5. Adding the filling: Place each round of dough on a baking tray. Spread the base with ketchup mixed with a little minced garlic. Then, evenly distribute the onion, bell pepper, sausage, and mushroom mixture over the pizza surface. Sprinkle the grated cheese on top and place the tomato slices for a colorful and appetizing look.

6. Baking the pizza: Preheat the oven to 220°C. Bake the pizza for 20-30 minutes, or until the edges are golden and crispy. Be careful with the bottom of the crust, as baking time may vary depending on the oven.

7. Serving: Let the pizza cool slightly before slicing. You can serve it with a fresh green salad or yogurt sauces for a refreshing contrast.
