Step 1: Preparing the starter
1. In a small bowl, place 50 g of fresh yeast and add 200 ml of lukewarm milk (not hot!). Gently mix to activate the yeast. Let it sit for 10-15 minutes until it becomes frothy.
2. Sift 250 g of flour into another bowl and add the prepared starter. Mix gently until the mixture resembles thick sour cream. Cover with a clean towel and let it rise in a warm place for about 30 minutes.
Step 2: Preparing the dough
1. In a pot, bring 500 ml of milk to a boil along with 500 g of sugar. Stir constantly until the sugar completely dissolves. When the milk starts to boil, turn off the heat.
2. In a large bowl, sift the remaining flour (750 g) and add the hot milk, stirring continuously with a wooden spoon to avoid lumps.
3. Add the butter cut into cubes (at room temperature) and mix by hand until fully incorporated into the dough.
4. Incorporate the egg yolks one at a time, mixing well after each addition.

1. Once the dough has risen, divide it into 3 equal parts. Take one part and stretch it with your hands on a clean surface (do not use extra flour, or the dough will become too dry).
2. Spread a generous layer of chocolate cream on the stretched dough.
3. Roll the dough tightly and then braid it with the other parts, forming a beautiful sweet bread.
