Baked Catfish
Ingredients: 1.2 kg carp, 3 medium onions, 150 ml oil, 100 ml vinegar, water to cover half of the fish, bay leaves, whole pepper, salt, and rosemary to taste
To prepare a delicious baked fish recipe, you need to ensure that you choose a fresh fish, preferably from species such as sea bream, perch, or trout, which have juicy and flavorful flesh. Start by cleaning the fish of scales and intestines, making sure to remove all impurities. Rinse it well under cold running water and dry it with paper towels to remove excess moisture. Now it's time to season it; sprinkle salt and pepper both inside the fish and on the outside to enhance the flavors.
After you finish seasoning, place the fish in a baking dish, which can be greased with a little oil to prevent sticking. Next, add a few sprigs of fresh rosemary and bay leaves on top, as these will add a special aromatic note. Whole peppercorns will also contribute to a more complex flavor. Julienned onion will add sweetness and texture to the dish, so don't forget to distribute it evenly over the fish.
To complete the marinating, pour olive oil, balsamic or wine vinegar, and a little water into the dish. These ingredients will create a delicious sauce that will help cook the fish and keep it juicy. Preheat the oven to a medium temperature of about 180°C (350°F), and place the dish with the fish inside.
Leave the fish in the oven for about 20-25 minutes, or until it forms a golden and appetizing crust. It is important to ensure that the fish is cooked evenly, so after it browns on one side, carefully turn it over to the other side. Cover the dish with aluminum foil to retain moisture, and let it cook this way for 15 minutes. Check periodically if more water is needed in the dish, adding a few tablespoons of water if necessary to prevent the dish from drying out.
After the foil has been removed, you can leave the fish in the oven for another 10-15 minutes until a crispy crust forms on the entire surface. This process will intensify the flavors and give the dish an irresistible texture. Finally, serve the fish warm, alongside suitable side dishes such as steamed vegetables or boiled potatoes, and enjoy a healthy and flavorful meal full of Mediterranean aromas.
