These delicious cookies are a true symbol of the holidays, bringing a touch of magic in every bite. With a light texture and rich flavor, these cookies are quick to prepare and perfect for enjoying with loved ones. Let's get started!

Ingredients:
- 6 fresh eggs
- 3 cups of sugar
- 3 cups of oil (preferably sunflower oil)
- 2 packets of baking powder
- 1 kg of flour
- 1 vial of vanilla essence
- 1 jar of jam (preferably apricot or raspberry)
- 200 g of butter (at room temperature)
- 50 g of cocoa powder
Step 1: Preparing the dough
In a large bowl, start by beating the eggs with the sugar and vanilla essence. Use an electric mixer to achieve a fluffy and homogeneous mixture. This step is essential to incorporate air into the dough, making the cookies lighter.
Step 2: Adding the oil
Once the egg and sugar mixture is well combined, gradually add the oil while continuing to mix. It’s important to add the oil in a thin stream to prevent the mixture from curdling.
Step 3: Incorporating the dry ingredients
Sift together the flour and baking powder, then gradually add them to the wet mixture. Use a spatula or wooden spoon to gently fold until the dough becomes homogeneous. There’s no need to knead too much, just enough to combine the ingredients.
Step 4: Shaping the cookies
From the obtained dough, form round balls the size of a walnut. Place them on a baking sheet lined with parchment paper, leaving some space between them as they will expand while baking.
Step 5: Baking
Preheat the oven to 180°C and bake the cookies for 15-20 minutes, or until they turn golden around the edges. Let them cool on the tray for a few minutes, then transfer them to a rack to cool completely.
Step 6: Filling the cookies
Once the cookies have cooled, use a knife or teaspoon to gently hollow out the center of each cookie, creating a small "nest" for the filling. In a bowl, mix the removed cookie crumbs with the jam, softened butter, and cocoa. Mix well until you get a smooth and delicious cream.
Step 7: Assembling
Fill each cookie with the obtained cream using a spatula or piping bag. You can sprinkle chopped nuts, chocolate chips, or even powdered sugar on top for a festive look.
Serving and variations
