Preparation:

3. Unrolling the dough: On a clean surface, roll out the puff pastry into a thin sheet, approximately 30 cm x 40 cm. Make sure the sheet is even to achieve nicely formed nests.
4. Sprinkling the flavored sugar: Evenly spread the sugar and cinnamon mixture over the entire surface of the dough. Use a spatula or simply your hands to ensure all corners are covered.
5. Forming the roll: Start rolling the dough from one corner, forming a tight roll. It is important that the roll is uniform to achieve nicely proportioned nests.
