Cheese Pastries – A Homemade Delicacy, Fluffy and Full of Flavor

Who hasn't dreamed of savoring a warm pastry, golden on the outside and filled with delicious cheese? These little treats are a perfect choice for a hearty breakfast, a snack between meals, or even an appetizer at a festive table. Why head to the bakery when you can make cheese pastries at home, without excessive added fats and with a unique taste? In this recipe, I will show you step by step how to achieve the ideal pastries, with a flaky dough and a creamy cheese filling, perfect for any occasion.

Preparation time: 30 minutes
Resting time: 2 hours
Baking time: 30-35 minutes
Total: 3 hours
Number of servings: Approximately 15 pastries

Necessary ingredients for the dough:
- 1 kg wheat flour
- 1 teaspoon salt
- 1 tablespoon vinegar
- 500-600 ml lukewarm water
- 400 g butter or margarine (for a richer taste, butter is recommended)

Ingredients for the filling:
- 500 g Telemea cheese (you can also use cottage cheese, but make sure it is well drained)
- 4-5 tablespoons cooked semolina with a pinch of salt (the semolina helps absorb excess moisture)

A bit of history:
Pastries have a long tradition in various cultures, appreciated for their fine texture and varied fillings. They can be made with different types of fillings, but those with cheese are truly a culinary gem. It is fascinating how a simple recipe can bring so much joy around the table, whether it’s a special occasion or a family meal.

Step by step for perfect pastries:

1. Preparing the dough:
In a large bowl, combine the flour with the salt. Gradually add the vinegar and lukewarm water, mixing with a spatula or your hands until you obtain an elastic and non-sticky dough. It is essential that the water is lukewarm to properly activate the gluten in the flour.

2. Kneading the dough:
Place the dough on a well-oiled work surface. Here, you will need to knead the dough for about 15 minutes, using the palm of your hand to give it a fine and elastic texture. Remind yourself that each movement adds love and dedication to this dish!

3. Dividing the dough:
Once the dough is well kneaded, divide it into balls of approximately 65-70 g. Round shapes are important to obtain uniform pastries. Place them on a tray, cover them with a damp towel, and let them rest for about 30 minutes.

4. Preparing the butter:
In a separate bowl, cream the butter or margarine until it becomes a smooth paste. This step is crucial because well-prepared butter will spread evenly on the dough.

5. Forming the pastries:
Roll each ball of dough into a square of about 15 cm. Generously spread with creamy butter, then fold it in thirds on one side and in fourths on the long side, forming a package. This process will help create a fluffy pastry dough. After finishing with all the balls, wrap them in plastic wrap and place them in the refrigerator for 1-2 hours.

6. Preparing the filling:
While the dough cools, prepare the filling. Crumble the Telemea cheese and mix it with the cooked semolina. This mixture will ensure a delicious filling that won't leak during baking.

7. Forming the final pastries:
After the resting time has passed, take the dough out of the refrigerator and, on an oiled work surface, roll each piece into a square of 20-25 cm. Place the cheese mixture in the center of each square and gather the corners towards the center, thus covering the filling. Make sure to seal the corners well to prevent the filling from leaking during baking.

8. Baking:
Preheat the oven to 180°C. Place the pastries on a tray lined with baking paper and bake for 30-35 minutes or until golden. The aroma that will fill your kitchen during baking will be irresistible!

9. Serving:
Once the pastries are ready, let them cool slightly on a rack. I recommend serving them warm, alongside creamy yogurt or a fresh green salad, which will balance the rich taste of the cheese. You can also add a yogurt sauce with dill or garlic for an extra touch of flavor.

Practical tips:
- If you want to reduce the amount of butter/margarine, you can try using only 300 g for a lighter taste.
- You can vary the filling with goat cheese or feta cheese, adding herbs like dill or parsley for a more intense flavor.
- These pastries can be frozen. Wrap them well in plastic wrap and freeze them. When you want to consume them, thaw them at room temperature and bake them directly from the freezer.

Frequently asked questions:
- Can I use whole wheat flour? Yes, but the dough may become denser and you will need to adjust the amount of water.
- How can I prevent the filling from leaking? Make sure the cheese is well drained and mix it with the semolina, which will absorb excess moisture.
- Can I use other types of filling? Absolutely! Pastries are versatile; you can add mushrooms, meat, or sautéed vegetables to create tasty variations.

These cheese pastries are more than just a simple recipe; they are an invitation to enjoy cooking and share beautiful moments with loved ones. Try them, and you will discover that each bite is an explosion of flavor and a joy for the soul! Enjoy!
