Ness Cake with Whipped Cream: a dessert that combines delicacy with an intense coffee flavor, perfect for any occasion. This recipe, inspired by the famous Bohemian cake, is a delight that will enchant your senses and turn any meal into a true celebration. It is simple to prepare, and the final result will surely impress everyone.

Total preparation time: 3 hours (1 hour for preparation, 2 hours in the refrigerator)
Number of servings: 12

Ingredients:

*For the base:*
- 5 large eggs (preferably at room temperature)
- 8 tablespoons of sugar
- 8 tablespoons of flour
- 3 tablespoons of cocoa (choose a quality cocoa for an intense flavor)
- a pinch of salt
- 3 tablespoons of water

*For the cream:*
- 1 egg
- 8 tablespoons of sugar
- 100 g butter (at room temperature)
- 3 tablespoons of ness (or instant coffee, depending on preference)
- 10 g gelatin
- 400 ml sweetened liquid cream (preferably with at least 30% fat)

*For the syrup:*
- 100 g sugar
- 100 ml rum (or water, for a non-alcoholic version)
- 200 ml water

*For decoration:*
- 400 ml liquid cream

Step-by-step instructions:

1. Preparing the base:
Start by preheating the oven to 180°C (medium heat). Prepare a 25x32 cm tray by lining it with baking paper. In a large bowl, beat the egg whites with a pinch of salt until they form a foam. Gradually add the sugar and continue mixing until you obtain a firm and shiny meringue.

In another bowl, beat the egg yolks with the 3 tablespoons of water. Gently fold the yolk mixture into the egg white meringue using a spatula. Add the sifted cocoa and flour, mixing gently to preserve the air in the mixture. Pour the mixture into the prepared tray and bake for 25-30 minutes or until the base passes the toothpick test (when inserted in the middle, it should come out clean). Allow the base to cool completely.

2. Preparing the cream:
In a small saucepan, combine the egg, sugar, ness, and butter. Place the saucepan over low heat and stir continuously until the sugar dissolves and the mixture begins to boil. Remove from heat and let it cool.

Meanwhile, hydrate the gelatin: place 10 g of gelatin in a glass of cold water and let it soak for about 5-10 minutes. When the egg mixture has cooled, melt the gelatin in the microwave for 2 seconds (do not let it boil) and add it to the egg mixture.

Whip the cream in a large bowl until it becomes firm, then carefully fold the egg and ness mixture into the cream using a spatula to maintain the air.

3. Preparing the syrup:
In another pot, combine the sugar, rum (or water), and water and bring to a boil. Let it boil for a few minutes, then cool.

4. Assembling the cake:
Once the base has cooled, place it on a serving platter and poke it with a fork to allow the syrup to soak in. Pour the syrup evenly over the base, then spread the ness cream on top, smoothing it with a spatula.

5. Cooling:
Cover the cake with plastic wrap and let it refrigerate for about 2 hours for the cream to set.

6. Decorating:
When the cake is well chilled, whip the 400 ml of liquid cream and decorate the cake as desired. You can use a piping bag or a spatula to create decorative shapes.

7. Serving:
Cut the cake into squares or rectangles and serve it cold. It is delicious alongside a freshly brewed cup of coffee or a fragrant tea.

Practical tips:
- Ensure that all ingredients are at room temperature, as this helps achieve a better texture.
- If you prefer a less sweet version, you can reduce the amount of sugar in the cream.
- Gelatin can be replaced with a plant-based thickening agent if you prefer a vegan version.
- The cake can be kept in the refrigerator for 3-4 days, but it is best consumed quickly to maintain its freshness.
