This delicious dessert, easy to prepare and extremely versatile, is perfect not only for fasting days but also for any special occasion. We start by preparing all the necessary ingredients, ensuring we have sugar, oil, sparkling water, flour, baking powder, essences, lemon zest, salt, cocoa, and coconut on hand. It is important to use quality ingredients, as they will influence the final taste of the dish.

In a large bowl, we add the sugar, oil, and sparkling water. We use a mixer to combine these ingredients, mixing them well until the sugar completely dissolves. At this point, we add the sifted flour mixed with baking powder, our favorite essences, grated lemon zest, and a pinch of salt. We continue mixing until we achieve a homogeneous composition, free of lumps.

We divide the obtained composition into two equal parts. In one of them, we add the cocoa and strawberry jam, mixing well until they are fully incorporated. In the other composition, we add the coconut, mixing again until we obtain a uniform mass. These two compositions, one dark and the other white, will create a special visual effect when the dessert is cut.

To bake the dessert, we line two small loaf pans, measuring 20x8x5 cm, with baking paper. We start adding the compositions to the pans, alternating: we put a spoonful of the brown composition, followed by a spoonful of the white composition, continuing this way until we finish both compositions. This arrangement will create a beautiful and appetizing pattern.

After filling the pans, we place them in the preheated oven at 180 degrees Celsius and let them bake for about 40 minutes. It is important to do the toothpick test to ensure the dessert is baked evenly. If the toothpick comes out clean, the dessert is ready.

After removing it from the oven, we let the dessert cool slightly in the pans, then we can flip it onto a rack to cool completely. If desired, we can dust the dessert with powdered sugar to give it an elegant look. The strawberry jam can be replaced with other types of jam or preserves, depending on individual preferences, so that each attempt at the recipe is unique. This delicacy will not only delight the taste buds but will also bring a touch of joy to any moment of the day.

 Ingredients: 175 g sugar, 100 ml oil, 200 ml sparkling water, 200 g flour, 1 teaspoon rum essence, 1 teaspoon vanilla essence, 1 teaspoon lemon zest, 1 packet baking powder, 2 tablespoons cocoa, 2 tablespoons strawberry jam, 3 tablespoons coconut, a pinch of salt.
