- 1 head of garlic
- Vinegar (preferably the one used for pickling hot peppers)

Preparation:

1. Preparing the meat: Start by washing the pig feet and beef tripe thoroughly. Cut them lengthwise to allow the flavors to penetrate better. Place them in a pressure cooker along with a whole carrot (or more, as preferred) and halved bell peppers. Add water up to 3/4 of the height of the pot and sprinkle with salt.

2. Boiling the meat: Put the pot on the heat and let it boil for about 50 minutes. Once the meat is boiled, separate it from the broth by straining and cut it into strips of 3-4 cm. Don’t forget to pick the meat off the feet!

3. Preparing the soup base: Add the strips of meat to the soup broth. Set aside the carrot and pepper, but don’t throw them away, as they can be used for other dishes.

4. The yogurt mixture: In a bowl, whisk the 5 egg yolks with a pinch of salt, then gradually add 1 liter of fatty yogurt. It is essential to add the mixture to the soup broth only when it is warm, not hot, to avoid curdling.

5. Adding garlic: Peel the head of garlic, crush a few cloves, and add them to the soup broth. This will give an intense and fragrant flavor to the dish. Adjust the taste with salt if necessary.

6. The orange stars: Grate two carrots on a fine grater and sauté them in a tablespoon of oil until the oil turns orange. Use a strainer to squeeze the carrot juice into the soup, thus enriching its appearance with orange stars.
