Cherry and Strawberry Cake
To prepare a delicious yogurt and fruit cake, we will start by preparing the base. In a large bowl, the egg yolks are taken and mixed with sugar until the mixture becomes slightly frothy and changes color to a lighter shade, almost white. This process is important because the incorporated air will help the base to be fluffy. Once we have achieved this consistency, water is gradually added while continuously mixing to well integrate the ingredients.
Subsequently, flour is taken and mixed with baking powder, then slowly added to the yolk mixture, stirring with a spatula or spoon to avoid lumps. It is essential to mix from bottom to top to keep the air in the mixture. Separately, the egg whites are beaten with a pinch of salt until they become a firm and glossy foam. This foam will be gently incorporated into the yolk mixture, continuing to mix carefully so as not to eliminate the air.
After the mixture is well homogenized, it is poured into the prepared pan, which has been greased with oil and lined with baking paper. The pan is placed in the preheated oven at a moderate temperature and baked for about 25-30 minutes. It is recommended not to open the oven door in the first 20 minutes to avoid affecting the volume of the bases. When ready, the base should be inverted onto a rack to cool completely.
Meanwhile, we move on to preparing the yogurt cream. The gelatin is soaked in 100 ml of cold water, then melted in a double boiler until it becomes liquid, being careful not to let it boil. After it has cooled slightly, it is added to the yogurt, mixing well to avoid lumps. In another bowl, the whipped cream is beaten with two packets of vanilla sugar until it becomes firm. This will be combined with the yogurt and gelatin, and finally, the pitted sour cherries are added.
After the base has cooled, it is cut into two equal parts, and the first part is placed in the detachable pan. The base is soaked with a syrup made from water, 5 tablespoons of sugar, and vanilla essence, which is boiled and then left to cool. After the base is well soaked, the yogurt cream with sour cherries is poured over, leveled, and the second part of the base is placed on top. The cake is put in the fridge for about an hour so that the cream can set.
After this time has passed, the top base is also soaked and decorated with a layer of strawberries and sour cherries. The remaining gelatin is poured over them, and the cake is left in the fridge overnight to set well. Before serving, it can be decorated with whipped cream on the sides of the cake for an extra taste and attractive appearance. This cake not only looks wonderful but is also a delicious combination of textures and flavors, perfect for any occasion.
