Stuffed kohlrabi is a simple and tasty recipe, perfect for impressing family or friends. This dish is not only hearty but also full of nutrients, thanks to the fresh vegetables. Ingredients:
- 4 medium kohlrabi
- 200 g minced meat (pork, beef, or chicken)
- 1 large carrot
- 1 parsley root
- 1 small onion
- 2 cloves of garlic
- 100 g rice (for added consistency)
- 1 tablespoon tomato paste
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 teaspoon peppercorns (optional, for extra aroma)
- Fresh herbs (parsley or dill)

Preparation:
1. Start by preparing the kohlrabi. Carefully cut off the top of each kohlrabi and hollow them out with a spoon or knife, being careful not to break the skin. Leave about 1 cm of pulp on the walls to keep them stable. Keep the pulp you remove for the filling.

2. Clean and finely chop the onion, carrot, parsley root, and garlic. Grate the removed kohlrabi pulp and add it to the chopped vegetables.

3. In a pan, heat the olive oil and add the onion. Sauté for 2-3 minutes until translucent, then add the carrot, parsley root, and garlic. Cook the mixture for another 5 minutes.

4. Add the minced meat to the pan and mix well. Cook for 10 minutes, stirring occasionally. Add the washed rice, kohlrabi pulp, and tomato paste. Season with salt, pepper, and, if desired, peppercorns for a more intense flavor. Let the mixture simmer on low heat for 10 minutes until the rice is almost cooked.

5. Preheat the oven to 180 degrees Celsius. Fill each kohlrabi with the meat and vegetable mixture, pressing lightly to make space. Place the kohlrabi in a baking tray, adding a splash of water to the bottom of the tray to prevent sticking.

6. Cover the tray with aluminum foil and bake the kohlrabi for 30 minutes. Then, remove the foil and let them brown for 15 minutes in the oven until they develop a golden crust.

Serving suggestions:
Serve stuffed kohlrabi warm, sprinkled with chopped fresh herbs. You can accompany this dish with a tomato and cucumber salad for a refreshing contrast.
