Smothered Broccoli
Rapini, also known as broccoli rabe, are a flavorful and nutrient-rich vegetable, ideal for being prepared in a simple yet delicious way. We start by washing and thoroughly cleaning the rapini, exclusively choosing those young, tender leaves and buds that resemble mini-broccolis. It is important to remove the large leaves and thick stems, as they may have a less pleasant texture. The very young leaves and fresh stems are the ones that will provide us with the best culinary experience.
In a enameled cast-iron pot or any other pot with a thicker bottom, we add a few tablespoons of extra virgin olive oil. Then, we put a clove of garlic in the pot, which we crush lightly to release its aroma. If we want a spicy taste, we also add a finely chopped hot pepper. It is essential to let the ingredients warm up slowly over low heat, without frying or burning the garlic, to avoid a bitter taste. Once the garlic becomes slightly golden, we can add the washed and drained rapini leaves and tops.
We cover the pot with a lid and let the vegetables steam for 5-10 minutes. It is important not to drain them completely of water, as this will help with cooking. After this interval, we add white wine or water, depending on our preferences, along with a bay leaf and salt to taste. We cover the pot again and let it simmer for 15-20 minutes, stirring occasionally to ensure the vegetables cook evenly.
When the largest leaves become soft, we can turn off the heat. It is time to remove the bay leaf and the clove of garlic, so as not to influence the final taste. We serve the rapini warm, alongside toasted bread, which we can spread with garlic and olive oil. This is an excellent side dish for steaks, pork ribs, sausages, or meatballs, but it can also be enjoyed as a vegetarian main course. The crunchy texture and slightly bitter taste of the rapini blend perfectly with the flavors of garlic and pepper, creating an unforgettable culinary experience.
Ingredients: For 2 servings: 600 g of rapini, 1 whole clove of garlic, chili pepper (optional), 1/2 small glass of oil, 1 glass of white wine or water, salt, and a bay leaf.
