Milanese Pumpkin Cream

 Ingredients: -350g pumpkin -400ml milk -butter -2 tablespoons parmesan -salt -4 tablespoons short pasta

The pumpkin, a versatile and nutrient-rich ingredient, is the star of our recipe today. We start by carefully peeling it, removing the tough skin and seeds, to ensure we are left with only the delicious flesh. After peeling, we cut the pumpkin into roughly equal-sized cubes so that they cook evenly. In a large pot, we put enough water, add a teaspoon of salt, and wait for it to reach boiling point. The pumpkin cubes are carefully added to the boiling water and left to cook for 10-15 minutes, or until they become soft and easy to mash with a fork. Once cooked, we drain them well and get to mashing until we obtain a smooth and creamy puree.

In another pot, we put 400 ml of milk over medium heat. It is important to choose quality milk, as it will add a rich flavor to our dish. When the milk starts to boil, we add the pumpkin puree and mix well to combine the flavors. We let the mixture simmer on low heat for about 5 minutes, ensuring that the pumpkin releases all its flavors into the milk.

After 5 minutes, it is the perfect time to add short pasta, such as penne or fusilli, directly into the pot with milk and pumpkin. It is essential to stir occasionally to prevent the pasta from sticking to the bottom of the pot. We cook the pasta according to the instructions on the package until al dente. Once the pasta is ready, we turn off the heat and add a generous piece of butter, which will add a touch of creaminess and a delicious taste.

Finally, we sprinkle freshly grated parmesan over the dish, mixing well to integrate it. The parmesan will provide a perfect contrast to the sweetness of the pumpkin, creating a symphony of flavors. We serve the pumpkin cream warm, in deep bowls, and we can add, if desired, a few sprigs of fresh parsley or a drizzle of extra virgin olive oil for an extra touch of flavor. This simple yet elegant recipe is perfect for a comforting dinner or a quick lunch, bringing a piece of aromatic autumn to your table. Enjoy your meal!
