To prepare this delicious stuffed mushroom recipe, we start by cleaning the mushrooms, making sure to remove any impurities. We wash them under a stream of cold water, then let them drain in a colander or on a paper towel, so they do not contain excess water. When the mushrooms are well-drained, we take care of the filling. We chop about three-quarters of the mushroom stems, the onion, garlic, and bell pepper into small cubes to ensure that the flavors will combine perfectly.

In a heated pan, we add olive oil and sauté the vegetable mixture over medium heat for about five minutes. It is important to stir constantly so that it does not burn. After the vegetables become slightly translucent, we add the diced bacon. We continue to stir to evenly distribute the flavors and let everything cook together for a few minutes. Then, we pour in the white wine, allowing the mixture to simmer until it reduces slightly, thus intensifying the flavors.

After about ten minutes, we add the sour cream and stir continuously until the mixture becomes almost homogeneous and thickens. It is essential to adjust the taste with salt and pepper to ensure a perfect balance of flavors. Now, we are ready to stuff the mushrooms. We place them in a baking dish lined with parchment paper, sprinkle a little salt and pepper on their surface, and then fill them with the prepared filling, being careful not to overstuff them.

On each stuffed mushroom, we place a thin slice of fresh tomato, which will add an extra touch of freshness and color. We place the tray in the preheated oven at 180 degrees Celsius and let it bake for 15 minutes. After this time, we take the tray out and add slices of cheese on top of the mushrooms, then we let them bake for another ten minutes until the cheese melts and becomes golden.

The stuffed mushrooms are served hot, accompanied by a garlic and herb yogurt sauce, which will perfectly complement the dish. These delicious stuffed mushrooms can also be enjoyed cold, remaining just as tasty.
