Necessary ingredients:
- 600 g fresh salmon fillet (preferably skin-on)
- 2 tablespoons sea salt
- 1 tablespoon brown sugar
- Zest of 1 lemon and 1 orange
- Juice of 1 lemon
- 1 teaspoon ground black pepper
- 1 bunch of fresh dill (optional)
- 2 tablespoons extra virgin olive oil
Step 1: Preparing the salmon
To achieve an even marinade, it is essential to choose a high-quality salmon fillet. Make sure it is fresh and boneless. Use a sharp knife to cut the salmon fillet along the backbone. This technique will allow the marinade to penetrate the meat better. Also, remove any excess fat from the belly side for a cleaner taste.
Step 2: Preparing the marinade
In a small bowl, combine the sea salt, brown sugar, lemon zest and orange zest, lemon juice, and black pepper. Mix well until you obtain a uniform paste. This marinade will not only infuse the salmon with fresh flavors but will also contribute to its juicy texture.
Step 3: Marinating the salmon
Place the salmon fillet in a flat dish and evenly add the marinade over it. Ensure that the entire surface of the fillet is covered. If desired, you can add a few sprigs of fresh dill for extra flavor. Cover the dish with plastic wrap and let it marinate in the refrigerator for at least one hour. The longer you leave it, the more flavorful the salmon will be.
Step 4: Cooking the salmon
After the salmon has marinated, remove it from the refrigerator and let it come to room temperature for 15 minutes. Meanwhile, heat a non-stick skillet with 2 tablespoons of olive oil over medium heat. Sear the salmon, skin side down, for about 4-5 minutes, then flip it and cook for another 3-4 minutes or until cooked to your liking. If you prefer, the salmon can also be baked in the oven at 180°C for 12-15 minutes.
Step 5: Serving
Marinated salmon is delicious served warm, but can also be enjoyed cold. Cut the fillet into portions and serve it on a platter with a fresh green salad or alongside steamed vegetables. A yogurt sauce with dill and lemon perfectly complements this dish. Don't forget to garnish with lemon slices and a few sprigs of dill for an attractive presentation!
Variation suggestion:
For an exotic touch, replace lemon juice with orange juice and add a few slices of fresh ginger to the marinade. This variation will give the salmon a sweet-sour flavor, perfect for warm summer days.
