Brassoi approximation (Brașov-style small steak)
Ingredients: 600 g pork meat (chop, leg) 3-4 tablespoons oil 1 onion 3-4 cloves garlic salt, ground pepper, paprika, marjoram 1 cup meat broth 600 g potatoes oil for frying the potatoes
To prepare a delicious recipe of sautéed meat with fried potatoes, we start by preparing the necessary ingredients. The meat, preferably beef or pork, is cut into small cubes, ensuring they are uniform for even cooking. Then, the onion is peeled and sliced into thin scales, and the garlic is sliced into fine pieces, so that the flavors are released more quickly during sautéing.
In a deep pan, heat 4 tablespoons of oil over medium heat. Once the oil is hot, add the onion and garlic, sautéing them for a few minutes until they become translucent and aromatic. It is important to stir constantly to prevent burning. After the onion and garlic take on a golden color, add the meat cubes to the pan. Fry until the meat changes color to white, indicating that the juices inside have been sealed.
Once the meat is well fried, add salt and pepper to taste to enhance the flavors. Then, add a teaspoon of paprika, which will give a sweet taste and an attractive color to the dish, and about 1/4 teaspoon of marjoram, which will add a fragrant note. Pour in a cup of broth, preferably beef or chicken, to enrich the flavor of the dish and provide moisture. Cover the pan with a lid and let it simmer on low heat, allowing the meat to soften.
Meanwhile, peel the potatoes, cutting them into cubes, ensuring the size is similar to that of the meat. In another pan, heat the oil to a high temperature and add the cut potatoes. Fry until they become golden and crispy on the outside, being careful to turn them occasionally for even frying. Once the meat has softened and the juice in the pan has evaporated, let it fry a little in the oil.
Finally, mix the meat with the fried potatoes, ensuring all ingredients combine well. The dish is garnished with finely chopped green onion or freshly chopped parsley for an extra touch of freshness and color. This recipe is perfect for a family meal, being savory and comforting. Served with a fresh salad, it will surely become a favorite for everyone!
