Alvita with Wafer

 Ingredients: 2 cups of sugar, 2 cups of walnuts, 125 g of butter, 2 eggs. The sugar is caramelized, then the butter is added and the pot is removed from the heat, walnuts are added and finally the eggs, mixing very quickly. This mixture is enough for 2 sheets of wafers. 3 egg whites, 175 g of honey, 250 g of walnuts, a pinch of salt. All the ingredients are beaten for about 10-15 minutes with a mixer (except for the walnuts) and then steamed for about 30-40 minutes, stirring frequently. I made the mixture and put it over the wafers.

To prepare a delicious wafer cake, we will start by ensuring we have all the necessary ingredients. In a large bowl, we will gather the main ingredients: 4 eggs, 200 g of sugar, 200 ml of oil, 300 ml of milk, 1 packet of baking powder, and 500 g of flour. These will form the base of our composition. We will also add 200 g of ground walnuts, which will provide a crunchy texture and an intense flavor.

The first step is to prepare our equipment. We will use a mixer to combine the ingredients. We start by beating the eggs with the sugar until the mixture becomes frothy and light in color. This process will take about 5-7 minutes. Then, we gradually add the oil and milk, continuing to mix well to achieve a homogeneous composition. It is important to ensure that all ingredients are well integrated before adding the flour.

After obtaining a homogeneous mass, we add the baking powder and flour, a little at a time, mixing constantly. Finally, we incorporate the ground walnuts, being careful not to crush them too much to maintain the crunchy texture. The resulting composition will be quite dense but extremely aromatic.

The next step is to prepare the wafers. We will place a sheet of wafer on a tray, and on top, we will pour a part of our composition. We continue to alternate the sheets of wafer with the layer of composition, making sure that each sheet is well covered. This technique will allow the cake to acquire a soft yet crunchy texture at the same time.

After we finish the layers, we will prepare the steam. It is recommended to use a steamer, but we can also improvise with a large pot filled with boiling water. We place the tray with the cake in the steam and let it cook for 30-40 minutes, stirring occasionally to ensure even cooking. It is important to constantly monitor the cake, as the cooking time may vary depending on the equipment used.

After the cooking time has elapsed, we remove the cake from the steam and let it cool slightly before cutting it into portions. This wafer and walnut cake will be a real treat, perfect for enjoying alongside a cup of tea or coffee.
