Bread with peanut butter
Ingredients: - 480 g white flour (I used BL-55 flour) freshly sifted and additionally flour for dusting the work surface and lining the tray - 8 g finely ground salt - 4.5 g dry yeast - 250 ml water at 25 degrees C (you may need a larger amount of water) - 300 g peanut butter at room temperature - 100 g peanuts (I didn't have peanuts and used almonds) - 100 g superfine sugar (used for caramelizing the peanuts) - 1/2 tablespoon of oil for greasing the tray and the food wrap.
To create a delicious caramelized peanut bread, follow these detailed steps that will transform your simple ingredients into something truly special. We start with preparing the peanuts. Take 200 g of unsalted peanuts and coarsely chop them in a food processor. They will add not only a savory flavor but also a crunchy texture to your bread. After chopping them, place the peanuts in a non-stick pan over medium heat. Add 100 g of sugar and 3 tablespoons of water. If you notice that the mixture is too dry, you can add an extra tablespoon of water.
Stir constantly with a wooden spoon, being careful not to let it stick. Continue boiling until the mixture becomes dry and crumbly. Once you achieve this consistency, reduce the flame intensity and keep stirring. When the sugar on the surface of the peanuts turns golden, remove the mixture from heat and let it cool in a cool place.
Meanwhile, we start preparing the dough. In a bowl, combine 500 g of flour, 7 g of dry yeast, and 10 g of salt. Make sure the salt does not come into direct contact with the yeast at first. Gradually add warm water (about 300 ml) and knead until you get a soft, sticky dough. Cover the bowl with plastic wrap and let the dough rise for an hour at room temperature.
After the dough has risen, add 100 g of peanut butter and knead again by hand until everything is well incorporated. Then, transfer the dough to a floured work surface and knead for about 10 minutes. At this point, add the caramelized peanuts and continue kneading until they are evenly distributed in the dough.
Cover the dough with a bowl and let it rise again for an hour. After this period, knead the dough a little on the lightly floured work surface. Divide the dough into 8 equal portions, shaping each piece into a ball, making sure to keep the unused dough covered so it doesn’t dry out.
Prepare a round baking pan with a diameter of 25 cm, greasing it with oil and dusting it with flour. Place the central ball in the middle of the pan, and the other balls around it, at the edge of the pan. Cover the pan with oiled plastic wrap and let it rise for another hour.
Meanwhile, preheat the oven to 200 degrees Celsius. Once the dough has risen again, bake it in the oven for 25 minutes, until it becomes golden and nicely browned. After removing the bread from the oven, let it cool on a rack. It is important not to slice the bread until it has completely cooled to preserve the texture and flavors.
