 Ingredients: 2 tablespoons of sesame seeds, 250 g of cheese of your choice, 1 tablespoon of fennel seeds (if you don't like the aroma, you can use less or none), grated zest of one lemon, 2 tablespoons of olive oil, black pepper, 1 1/2 tablespoons of finely chopped mint leaves, 20 whole mint leaves, 1/2 cucumber (preferably seedless), 10 black olives (I used green ones stuffed with peppers), 20 skewers. This quantity makes 20 appetizers.

Sesame seeds are a delicious and versatile ingredient, and toasting them in a pan until golden enhances their flavor, giving them a unique taste. The first step in preparing this refined appetizer is to toast the sesame seeds over medium heat, stirring constantly to prevent burning. When they turn golden and emit a pleasant aroma, remove them to a plate and let them cool.

Next comes the preparation of the telemea, an essential ingredient in the recipe. Rinse the telemea in cold water to remove excess salt, then dry it with a paper towel. Cut it into strips and then into pieces about 2.5 cm. Mix the telemea pieces with fennel seeds, toasted sesame seeds, grated lemon zest, and a bit of pepper. For assembly, take a skewer and place a mint leaf on it, followed by half an olive, a piece of cucumber cut into a square shape, and finally, a piece of marinated telemea. These combinations are not only delicious but also very colorful, immediately catching the guests' eyes.

It is important to serve the appetizer cold or at room temperature to highlight all its flavors. Additionally, it is wise to prepare for various guest preferences; for example, if some have gallbladder issues, you can prepare two versions of the appetizer, with and without cucumber.
