Let's see how we can make this delicious cake step by step.
Preparation time: 20 minutes
Baking time: 40 minutes
Total time: 1 hour
Number of servings: 12
Ingredients:
For the base:
- 200 g cocoa biscuits
- 100 g melted butter
- 3 eggs
- 200 g sugar
- 250 g cottage cheese (can be replaced with mascarpone cheese for a creamier texture)
- 100 g sour cream (for a richer taste)
- 1 packet of baking powder
- 1 teaspoon vanilla essence
For the grated dough:
- 150 g flour
- 50 g cocoa
- 100 g cold butter, diced
- 80 g sugar
- 1 egg
Preparation method:
1. Preparing the ingredients: Start by preheating the oven to 180°C. Prepare a baking tray of about 30x20 cm, greasing it with butter or lining it with baking paper.
2. Preparing the base: In a large bowl, combine the crushed cocoa biscuits with the melted butter. Mix well until you get a moist composition. Place this mixture in the prepared tray, pressing it down well with a spatula to form an even layer.
3. Preparing the cheese filling: In another bowl, beat the eggs with the sugar until frothy. Add the cottage cheese, sour cream, baking powder, and vanilla essence. Mix well until you obtain a homogeneous composition. Pour this filling over the biscuit base in the tray.
4. Preparing the grated dough: In a separate bowl, combine the flour, cocoa, sugar, and diced cold butter. Using your fingers or a pastry cutter, mix until the mixture resembles crumbs. Add the egg and mix until you obtain a homogeneous dough.
5. Assembling the cake: Grate the cocoa dough over the cheese filling, ensuring that you cover the entire surface evenly.
6. Baking: Place the tray in the preheated oven and bake the cake for 30-40 minutes, or until the cocoa dough on top becomes firm and slightly crispy. A useful tip is to do the toothpick test: insert a toothpick into the center of the cake; if it comes out clean, the cake is ready.
7. Cooling and serving: Allow the cake to cool in the tray for 15-20 minutes, then transfer it to a wire rack to cool completely. Cut into squares and serve with a fruit sauce or a dollop of sour cream for an even more sophisticated taste.
Personalized version: You can add chocolate chips or nuts to the cheese filling for added texture and flavor. Also, for a contrast of flavors, try adding a bit of lemon zest to the cheese filling.

All the ingredients for the dough: flour, margarine (melted), sugar, egg yolk, baking powder, cocoa, are placed in a bowl in a heap and the kneading operation begins (with hands or mixer). After kneading with the mixer, the dough was a bit crumbly, so I added about half a glass of warm milk to be able to knead the dough. After pouring all the milk over the dough, I started kneading. Then I divided the dough equally into two, wrapped them in aluminum foil, and put them in the freezer while I prepared the cream cheese. For the cream cheese, I did the following: I whipped the egg whites from the 3 eggs, mixed them with the yolks, sugar, and vanilla sugar, along with the cottage cheese, and I also added a handful of raisins, which was not in the recipe. I took the dough balls out of the freezer, and in a greased pan with margarine and dusted with flour, I grated (large grater) the first ball of dough (it was a bit hard). I made sure it was spread evenly over the bottom of the pan. The cream cheese is spread over the grated dough (it should be spread evenly), and the second ball is grated on top. I left the pan in the oven at 175 degrees for about 40-50 minutes (do the toothpick test) and dusted it with powdered sugar. Enjoy your meal!
