Chocolate Cream and Wild Strawberry Jam Pound Cake

Who doesn’t fondly remember childhood moments spent in the kitchen, when the scent of freshly baked goods filled the air? Today, I will guide you in making a delicious cake, built on a moist and aromatic pound cake, enriched with a fine chocolate cream and wild strawberry jam, that will turn any meal into a special occasion. This cake is not just a simple dessert; it’s a true taste experience!

Preparation time: 30 minutes
Baking time: 0 minutes (as we are using a pre-baked pound cake)
Total time: 30 minutes
Servings: 8

Ingredients:

For the cake:
- 1 pound cake (about 400-500 g)
- 200 g butter (65% fat, preferably at room temperature)
- 100 g chocolate sauce (e.g., Dr. Oetker)
- 2 heaping teaspoons of wild strawberry jam (homemade or store-bought)
- 80 g white chocolate
- 80 g heavy cream

For the syrup:
- 2 packets of instant coffee
- 1 tablespoon of sugar
- Warm water (enough to dissolve the coffee)

For decoration:
- Chocolate shavings (for an irresistible look)

Instructions:

1. Prepare the ingredients: Ensure all ingredients are at room temperature, especially the butter, which should be soft for easy mixing. If you have leftover pound cake from the previous day, it’s perfect as it will be moist and flavorful.

2. Prepare the cream:
- In a bowl, cut the butter into very small cubes. This will help incorporate the ingredients more easily.
- Add the chocolate sauce and wild strawberry jam over the cut butter. Mix at medium speed until you achieve a smooth mixture. Don’t worry if the cream looks like it’s separating; we will fix this in the next steps.
- In a heatproof bowl, melt the white chocolate together with the heavy cream over a double boiler. Stir gently until well combined. Let it cool for 10 minutes.
- Once the chocolate has cooled, start incorporating this mixture into the butter cream. Add a tablespoon of the melted cream to the butter cream and mix on low speed. Continue adding the chocolate cream until fully incorporated. You will end up with a smooth and delicious cream.

3. Prepare the syrup:
- In a small bowl, combine the two packets of instant coffee with a tablespoon of sugar and add warm water. Mix well until the sugar is completely dissolved. This syrup will add an intense coffee flavor to your cake.

4. Assemble the cake:
- Slice the pound cake into 4 equal pieces. This step is essential for creating perfectly balanced layers.
- Place the first slice of pound cake on a serving platter and generously soak it with the coffee syrup using a brush or spoon.
- Spread some of the chocolate cream over the first slice. Ensure it is evenly distributed.
- Repeat the process with the second and third slices of pound cake, alternating between soaking and applying the cream.
- Finally, place the last slice of pound cake, soak it, and cover the entire cake with the remaining cream.
- Decorate with chocolate shavings on top, giving the cake an elegant and appetizing look.

5. Serving:
- Allow the cake to sit in the refrigerator for about 30 minutes before slicing. This will allow the flavors to meld and the cream to firm up slightly.
- Serve the cake with a cup of freshly brewed coffee or a fragrant tea to complete the tasting experience.

Helpful tips:
- If you want to add a citrus note, you can incorporate a bit of lemon zest into the chocolate cream for a pleasant contrast.
- You can replace the wild strawberry jam with other types of jam, such as strawberry or raspberry, depending on your preferences.
- This cake keeps well in the refrigerator for a few days, but it’s best enjoyed fresh.

Nutritional benefits:
This chocolate cream pound cake is not only delicious but also a source of energy due to its butter and chocolate content. The nuts add healthy fats, while the wild strawberry jam provides a boost of vitamins and antioxidants, making it a healthier choice than other sugar-laden desserts.

Frequently asked questions:
- What should I do if the cream separates?
- Don’t worry! You can add a little cold heavy cream to bring it back together. Mix slowly until it comes back to form.

- Can I use store-bought pound cake?
- Absolutely! A store-bought pound cake can be a quick and convenient choice. Just ensure it’s of good quality for the best results.

- How can I customize the cake?
- You can add flavors like rum or vanilla extract to the chocolate cream or experiment with different types of chocolate, such as dark chocolate.

This chocolate cream pound cake will surely become a favorite recipe in your home, bringing family and friends together around a table full of joy. Enjoy!
