Leek and potato cream soup with sour cream
Ingredients: 2 chopped leeks sliced, 4-5 medium potatoes diced, 1 grated carrot, 1 root of parsley sliced, 4 slices of kaiser (bacon), 1.5 liters of chicken broth (homemade or made with 2-3 Knorr cubes), thyme and lovage, 250 ml of liquid sweet cream.
We start by preparing the necessary ingredients for this delicious soup. The first step is to make sure we have all the ingredients on hand: kaiser, leek, carrot, potatoes, parsnip, sweet cream, fresh lovage, dried thyme, salt, and pepper. This soup is not only a nourishing dish but also an explosion of flavors that will delight your taste buds.
In a pan, we add a few tablespoons of oil and let it heat up. Carefully, we cut the kaiser into smaller slices, then fry them for 1-2 minutes. The goal is to achieve a crispy texture and an intense smoky flavor. Once the kaiser slices have turned golden, we remove them onto a napkin to absorb the excess oil and keep them for later, when the soup is ready.
In the same pan, we use the flavored oil infused with smokiness to add the finely chopped leek and grated carrot. We let the vegetables brown slightly, stirring occasionally, until the leek becomes soft and translucent. Then, we add the peeled and cubed potatoes, along with the parsnip, sliced thinly. These vegetables will add sweetness and consistency to our soup.
Over the vegetables in the pot, we pour in the hot chicken broth, ensuring that all the ingredients are covered. We let it simmer on medium heat, stirring occasionally, until the vegetables become very soft and full of flavor. After they are cooked, we take half of the soup and transfer it to a food processor or blender, where we turn it into a smooth puree. This step will give the soup a creamy and velvety texture.
Once we have the puree, we pour it back into the pot and add the sweet cream. We let the soup come to a boil again, stirring to integrate all the flavors. Finally, we season with salt and pepper to taste, keeping in mind that the chicken broth may already be salty. We add the finely chopped fresh lovage and dried thyme, which will bring an extra touch of freshness and flavor.
To complete the dish, we cut the fried kaiser into small pieces and fry them in a pan until they become crispy. This will be added to the plates alongside the cream soup for a perfect contrast of textures. We serve the soup hot, garnished with fresh lovage leaves and slices of smoked meat, offering a comforting and flavorful meal. This soup will surely become a favorite in your household!
