To prepare these delicious fluffy croissants filled with Finetti cream, we start by making a starter that will give the dough a slightly airy texture and a special taste. In a small bowl, we add a tablespoon of flour and a bit of warm milk, then sprinkle the yeast. We mix gently and let the starter rise in a warm place until it doubles in volume. This step is essential because the yeast will activate the fermentation process.

Meanwhile, we take care of the other ingredients. We separate the egg whites from the yolks, being careful not to let any yolk get into the egg whites. In a bowl, we beat the yolks well with sugar and a pinch of salt until the mixture becomes homogeneous and changes color to white. In a saucepan, we warm the milk slightly, then gradually add it to the yolk mixture, stirring continuously until the sugar is completely dissolved. Finally, we add the rum essence to enhance the flavor.

Once the starter has risen, we add it to the milk and yolk mixture. We begin to incorporate the sifted flour, kneading the dough well. At some point, we heat the butter and add a tablespoon of melted butter, mixing continuously until the dough becomes homogeneous and no longer sticks to our hands. We cover the dough with a clean towel and let it rise further for about 40-45 minutes in a warm place.

Once the dough has risen significantly, we turn it out onto a lightly floured work surface and divide it into 6 or 8 equal balls. Each ball is rolled out into a thinner circle, then we cut the circle into four triangles. On each triangle, we place a portion of Finetti cream and start rolling from the base of the triangle. We continue this procedure with all the dough balls.

We prepare a tray lined with baking paper and arrange the formed croissants. We let them rise for another 15 minutes, covered with a towel. In a small bowl, we mix the remaining yolk with milk and brush the croissants with this mixture, then sprinkle sugar on top for extra crunchiness. We preheat the oven to 180 degrees Celsius and place the tray with croissants inside. We let them bake until they turn golden and appetizing, and their aroma will fill the entire house. When they are ready, we carefully remove them and let them cool slightly before enjoying. These croissants are perfect for breakfast, snacks, or any special occasion!
