Boiled Mayonnaise with Different Flavors
Ingredients: 4 egg yolks, 4 teaspoons powdered sugar, 4 teaspoons sour cream, 70 g butter (margarine), 1 teaspoon mustard vinegar (optional, I didn't add), salt, 400 ml sour cream or yogurt, 6 cloves of garlic, green parsley.
To prepare a delicious and versatile boiled mayonnaise, we start with four fresh egg yolks. These are vigorously whisked with four teaspoons of powdered sugar, four teaspoons of sour cream, 70 grams of Rama butter, a teaspoon of vinegar, and a pinch of salt. It is essential to achieve a homogeneous and creamy mixture, which will be the base of our mayonnaise.
We place the bowl with the yolk mixture over another bowl containing boiling water. It is important that the water does not touch the bottom of the upper bowl, so we can take advantage of the steam that will gently cook the ingredients. We continuously stir with a spatula or whisk to prevent sticking and to achieve a fine texture. We continue this process until the mixture thickens and becomes slightly denser. If you want to add a touch of flavor, now is the perfect time to incorporate a teaspoon of mustard, which will provide a subtle yet distinct taste.
After removing the mixture from the steam, we incorporate 400 ml of sour cream, adjusting the taste with salt to preference. This boiled mayonnaise has a lighter consistency than the classic version, making it ideal for various dishes. To transform it into an even more interesting delicacy, I crushed a few garlic cloves, which I mixed with a little salt and oil until I obtained a fragrant paste. This is added to the mayonnaise, along with a handful of finely chopped parsley, providing an extra freshness and an unmistakable taste.
The mayonnaise prepared this way is not only healthier but also more durable, as it can be kept longer in the refrigerator.
