Spaghetti with Arugula Pesto and Zucchini
Ingredients: -250g spaghetti -200ml water + water for boiling the spaghetti -1 handful of arugula -2 walnuts -2 cloves of garlic -7 tablespoons olive oil -1 zucchini -4 tablespoons cheese -salt -pepper
Spaghetti is a classic dish loved by everyone for its versatility and delicious taste. We start by boiling the spaghetti according to the instructions on the package. It is important to use a generous amount of water and add salt to enhance the flavor of the pasta. Once cooked al dente, we drain them and let them cool slightly while we prepare the sauce.
In a non-stick skillet, we add 3 tablespoons of extra virgin olive oil, which will bring a rich flavor to the dish. Then, we add a whole clove of garlic, which will infuse the oil with its unmistakable aroma. The garlic will leave a delicious scent in the pan, and later we will remove it so that it doesn't overpower the sauce.
Zucchini, a versatile and healthy ingredient, is washed well under cold running water. Then, we cut it into quarters, remove the white part from the inside, and cut it into small cubes. These cubes are added to the skillet, where the garlic has already softened. We let the zucchini sauté gently, stirring occasionally to brown evenly. After a few minutes, we add 200 ml of water, salt, and pepper to taste. This will help cook the vegetables thoroughly and create a delicious base for the sauce.
Once the water has significantly reduced, we turn off the heat and let the zucchini cool slightly. In another container, we wash the arugula well, a vitamin and mineral-rich ingredient that will add freshness to the dish. We put it in the blender cup, add another clove of garlic, and the walnut pieces, which will provide a crunchy texture and deep flavor.
We remove the fried garlic from the skillet and add the zucchini cubes to the blender cup, over the arugula and the remaining ingredients. We sprinkle a little salt and add 4 tablespoons of olive oil, which will contribute to creating a creamy and flavorful sauce. We blend everything at high speed for a few minutes until we achieve a smooth and fine paste.
When the spaghetti is ready, we place it in a large bowl, and pour the prepared sauce over it, mixing well to ensure that each strand of spaghetti is evenly coated. Finally, we add a few tablespoons of cheese, which will melt slightly, adding an extra layer of flavor and creaminess. Serve immediately, enjoying a healthy and tasty dish. Bon appétit!
