A brief story about goat roast
Goat meat has been appreciated over time for its tender texture and refined taste. It has often been reserved for special occasions, holding a special significance in culinary traditions, bringing family and friends together. Thus, preparing this roast not only delights the taste buds but also enriches family bonds.

Step by step

1. Preparing the meat:
Start by cleaning, washing, and thoroughly drying the goat meat with a kitchen towel. It is important that it is dry for the marinade to absorb better.

2. Scoring the meat:
With a sharp knife, make small incisions in the meat. This will allow the flavors to penetrate better. Insert a clove of garlic into each incision. This technique will provide a delicious and intense aroma.

3. Seasoning:
Sprinkle salt and freshly ground pepper on all sides of the meat. This will help highlight the flavor of the meat. Drizzle the meat with olive oil and rub it well, ensuring that each piece is evenly coated with spices.

4. Marinating:
In a bowl, combine the red wine, honey, and balsamic vinegar. Mix well until the honey is completely dissolved. Pour the marinade over the meat, cover the dish with aluminum foil, and let it sit in the refrigerator for a few hours or ideally overnight. Marinating is crucial for achieving tender and flavorful meat.

5. Roasting:
Preheat the oven to 200 degrees Celsius. Remove the meat from the refrigerator and place it in a baking dish. Roast for 30-40 minutes, then turn the meat and let it roast for another 30-40 minutes. It is important to check from time to time that the sauce does not reduce completely, and if necessary, add a little wine.

6. Color and crust:
Once the meat is cooked, remove the aluminum foil and return the meat to the oven for another 10 minutes to achieve a beautiful golden crust. Turn the meat again to brown it evenly.

7. Serving:
Once the roast is ready, let it rest for a few minutes before slicing. This will help retain the juiciness of the meat. We served the roast with mashed potatoes and pickled cucumbers, but we encourage you to experiment with sides according to your preferences.

Useful tips
- Marinade: If you want a more intense flavor, you can add rosemary or thyme leaves to the marinade.
- Sides: Goat roast pairs excellently with grilled vegetables, fresh salads, or various vegetable purees.
- Sauce preservation: Make sure the sauce does not reduce completely during roasting. Add a little wine or water if necessary to maintain moisture.
- Variations: You can experiment by adding spices like paprika or chili for a bit of heat.

Nutritional information
Goat roast is an excellent source of protein, and goat meat is leaner compared to other types of meat, making it a healthy option. It is rich in iron and vitamin B12, essential for nervous system health and red blood cell formation.
