Tender turkey breast schnitzel with mustard
Ingredients: Turkey breast mustard for spreading on slices of meat, salt, white pepper, eggs, flour, oil for frying. Potato garnish: potatoes, 1 onion, 3 cloves of garlic, 2 tablespoons of cream, milk.
Preparation of schnitzels: Start by cutting the turkey breast into evenly sized pieces to ensure even cooking. Place the obtained slices between two plastic bags and use a meat mallet to gently pound them, being careful not to reach too thin a thickness. The goal is to achieve a soft and juicy texture while maintaining a certain thinness for even frying. Once you finish this step, spread mustard on both sides of the breast slices, making sure they are well coated. Then, cover everything with a bag or plastic wrap and refrigerate until the next day. This step will give them a rich flavor and make them more tender.
The next day, take the slices out of the fridge and season them with salt and white pepper, adjusting the amount to your taste. Prepare a bowl with flour, another with beaten egg, and, if you prefer, a bowl with breadcrumbs for a crunchier schnitzel. Dipping in flour will help achieve a golden crust, and the egg will bind the breadcrumbs. Heat a generous amount of oil in a pan, and when the oil is hot, fry the schnitzels on both sides until they become golden and crispy. If you choose to coat them with breadcrumbs, make sure to cover them evenly and fry for a few extra minutes to achieve that crunchy and delicious texture.
Potato side dish: While preparing the schnitzels, take care of the potato side dish. Peel the potatoes, wash them well, and cut them into not very thick slices. Boil them in a pot with salted water and let them cook until they become soft but not overly cooked, so they don’t turn into mash before you crush them. Once boiled, remove them from the water and mash them using a potato masher, gradually adding a tablespoon of butter and a little warm milk until you reach the desired consistency.
In a separate pan, melt a tablespoon of butter and add a finely chopped onion, letting it sauté gently until golden. Then add the three crushed garlic cloves and let everything infuse with delicious flavors. Combine this mixture with the mashed potatoes and mix well to integrate all the flavors. The result will be a potato puree with a special flavor, perfect to accompany the schnitzels.
