Start by preparing all the necessary ingredients: 200 g of butter, 200 g of sugar, 1 packet of vanilla sugar, 4 eggs, 300 g of flour, 1 packet of baking powder, 200 ml of milk, 40 g of mosaic decoration, and a pinch of salt. Make sure the butter is at room temperature so that it can be easily incorporated with the sugar.
In a large bowl, cream the soft butter with the sugar and vanilla sugar using a mixer or spatula until the mixture becomes fluffy and light in color. This step is essential for achieving an airy texture. Once you have a smooth cream, add lemon essence, which will provide a fresh aroma and a touch of acidity to the cake. Then, gradually incorporate the egg yolks, mixing well after each addition.
