Baked Pie

 Ingredients: For the dough; - 1/2 flour; - 150 ml warm milk; - 1 teaspoon of salt; - 25 g yeast; - 100 ml oil; - 2 eggs.

To prepare a delicious pie, we start by making the dough. In a container, we heat 250 ml of milk until it becomes warm, then add 25 g of fresh yeast and a teaspoon of salt. We mix well to dissolve the yeast, ensuring it activates properly. Once the yeast has dissolved, we pour the mixture over 500 g of flour, add 100 ml of oil and 2 fresh eggs. We start kneading the dough until it becomes smooth and elastic. Once we achieve a fine texture, we cover the bowl with a clean towel and let the dough rise for about an hour in a warm place so that it doubles in volume.

In the meantime, we prepare the filling. In a bowl, we combine 300 g of cheese (it can be cottage cheese or feta cheese, according to preferences) with 150 g of diced ham salami. We add ½ finely chopped onion, 3 eggs plus one egg white, a few sprigs of freshly chopped dill, and, if desired, some diced bell peppers for extra flavor and texture. We season the mixture with salt, pepper, and other preferred spices, ensuring that the filling will have a rich and savory taste.

After the dough has risen, we divide it into two parts: a larger part and a smaller one. We roll out the larger part with a rolling pin on a floured surface and place it in a greased baking tray, making sure to cover the bottom well. We sprinkle 2-3 tablespoons of semolina over the dough in the tray, and then we evenly add the previously prepared filling.

We roll out the second part of the dough and cut it into thin strips, which we place over the filling, forming a lattice. This technique not only enhances the appearance of the pie but also allows steam to escape during baking, keeping the filling juicy.

The pie is placed in a preheated oven at 180°C and baked for about 30-40 minutes until it becomes golden and crispy. 15 minutes before removing it, we beat 2 eggs with 150 g of sour cream and pour the mixture over the pie to create a delicious and creamy crust. After the time has elapsed, we take the pie out of the oven, let it cool slightly, and then serve it warm, enjoying its wonderful aroma and taste. This recipe is perfect for a family meal or a gathering with friends, being a dish that will impress everyone.
