Orecchiette (Pasta) with Canned Beans and Fish

 Ingredients: For 2 servings: 160 g small pasta (I used orecchiette) 200 g peeled tomatoes in tomato sauce 1 can of fish (sardines, mackerel, whatever you like) 240 g cooked beans (preferably red beans, they are tastier) 1 tablespoon of olive oil or, if necessary, oil from the fish can.

To prepare a delicious and hearty dish, we start by boiling the pasta. Choose your favorite pasta, whether fusilli, penne, or spaghetti, and put it to boil in salted water according to the instructions on the package. Usually, the boiling time is about 8-12 minutes, but it is essential to check them from time to time to get them perfectly al dente. This will ensure that the pasta retains its texture and does not become too soft.

In the meantime, we start preparing the sauce. In a large skillet, add a few tablespoons of good quality olive oil. Heat the oil over medium heat and add the fresh tomatoes, chopped into small pieces. The tomatoes will release their natural juice, and the oil will help intensify the flavors. Let the mixture simmer uncovered for about 10 minutes, stirring occasionally. This is the perfect moment to enjoy the enticing aromas developing in the pan.

After the tomatoes have softened and formed a delicious sauce, add the canned fish that you drained earlier. Stir well so that the fish breaks down slightly and integrates into the tomato sauce. It is important to use quality fish, preferably tuna or sardines, as it will add extra flavor. Once the fish is well mixed, add the beans, whether white or red, and stir once more. The beans will bring a pleasant texture and an extra boost of protein to the dish.

When the pasta is ready, drain it carefully, but do not rinse it to keep the starch that will help the sauce stick to the pasta. Pour the pasta directly into the skillet with the tomato and fish sauce. Stir vigorously to ensure an even coating of the pasta with sauce.
