Tortellini with Roasted Peppers, Cheese, and Thyme

Ingredients: Dough: 170 g cooked peppers/garlic (without crusts and seeds) 1/2 lgt salt 1/2 lg extra virgin olive oil flour as much as you need (~300 g) Filling: 120 g sweet cow's sweet cream 1/2 lgt dried thyme 1/4 lgt coarse salt

1. Start by preparing the roasted peppers, which will give a special flavor to your dish. You can use red or yellow peppers, depending on your preferences. Roast them on a tray in the oven or on the grill until the skin becomes charred. Once they have cooled, peel off the skin and place them in a blender. Blend until you achieve a fine and smooth paste, without lumps. This paste will add an intense aroma and vibrant color to your recipe.

2. On the work surface, sprinkle flour and make a well in the center. Add salt, the roasted pepper paste, and olive oil. These ingredients will combine perfectly, giving the dough a distinctive flavor. Start incorporating the flour into the mixture from the edges towards the center. Knead the dough energetically for about 5 minutes until it becomes elastic and smooth. Once finished, lightly dust it with flour, cover it with a clean towel, and let it rest for at least 15 minutes. This resting period will allow the gluten to relax, making it easier to roll out later.

3. Meanwhile, prepare the filling. Use fresh cheese with a fine texture, and knead it well with salt and thyme. These flavors will blend perfectly, giving the filling a savory taste. Make sure the ingredients are well incorporated so that each bite is full of flavor.

4. After the dough has rested, divide it into four equal portions. Take each piece and roll it out as thin as possible, being careful not to tear it. Ideally, you should reach a thickness of about 0.2-0.3 mm. Use a ruler to cut the dough into 4 cm squares, ensuring that they are all equal in size.

5. On each square of dough, place about 1/4 teaspoon of the prepared filling. Fold the square into a triangle, making sure to press the edges well to prevent the filling from leaking during boiling. Once you have formed the triangles, fold the tip of the triangle inward, holding your finger in the middle to create a nice shape. Pinch the longer ends together over your finger, ensuring they are well secured.

6. In a large pot, bring salted water to a boil. When the water starts to boil, carefully add the prepared dumplings. Let them boil until they rise to the surface, a sign that they are cooked. This is a simple recipe, but full of flavors, that will surely impress anyone who tastes it. Enjoy your meal!
