Recipe for making papanasi. I grated the cheese, added the eggs (from my ladies) well beaten with a pinch of salt, the flavors, and the sifted flour mixed with baking powder and semolina, and I kneaded a dough (I don't know how I made the dough, because you know I don't like to do such things... shame on me) that is elastic and non-sticky. I floured the work surface (poor thing, it's been resting for a while) and from the dough, I made a roll, which I cut into pieces about 2 cm wide, using a thin knife dusted with flour before each cut. Oh my, how easy it is, and what chatter... For each dough ring, I made a central hole with my index finger dusted with flour. From a small piece of dough, I also made some balls, equal in number to the dough rings. In a pan, I poured enough oil, let it heat well, and fried both the papanasi and the doughnuts on both sides until nicely browned. I attached a doughnut to each papanas, added sour cream like from someone else, and topped it with a dollop of jam. PS I only fried half for this hour, but the rest will follow, PM (post meridian, not post mortem).
