Fish Soup
Ingredients: 2 larger fish (preferably carp... honestly, I don't know what mine are :) ) 4 pieces of crucian carp 2 pieces of parsley root 2 pieces of parsnip 1 piece of celery 2 pieces of carrot 3 potatoes 3 tomatoes a handful of rice a bunch of lovage a bit of salt
To prepare a delicious fish soup, we start by gathering all the necessary ingredients. We need four fresh carp, which will be the base of this flavorful soup, as well as the vegetables that will add flavor and texture to our dish. So, prepare a celery, a carrot, a parsnip, and a bunch of fresh parsley. These ingredients will not only enrich the soup but also provide a fresh, natural taste.
In a large pot, we will add the four cleaned and washed carp, along with the finely chopped vegetables. We cover with water and place the pot over medium heat. We let it boil until the fish and vegetables become very soft, and the flavors combine in a pleasant way. It is important to stir occasionally to prevent the ingredients from sticking to the bottom of the pot. Once everything is boiled and well penetrated, we will use a blender or a masher to pass the mixture through a fine sieve. This step will ensure a velvety texture of the soup, and the vegetables and fish will turn into a uniform paste.
If the mixture is too thick, do not hesitate to add a little liquid to achieve the desired consistency. Once we have obtained a fine soup, it is time to add the diced potatoes and rice. These will contribute to enriching the soup and will turn the dish into a hearty meal. We let everything boil, stirring occasionally, until the potatoes become soft and the rice absorbs its flavor from the soup.
When the potatoes and rice are half cooked, it is time to add the remaining fish pieces, cut into cubes, and the fresh tomatoes, also diced. These will add a splash of color and acidity to our soup, enriching the final taste. When the fish is almost done, we add the borscht to taste, being careful to adjust the acidity according to everyone's preferences. We let the soup boil for a few more minutes, so that all the flavors blend perfectly.
Finally, we serve the hot soup, garnished with freshly chopped green lovage, which will add a note of freshness, and for those who love spicy, with sliced hot pepper. This dish is not only nourishing but also full of flavor, perfect to be enjoyed on chilly days or when we feel the need for comfort. Bon appétit!
