If you are looking for a quick and elegant dessert, Gateau Royale is the perfect choice. This recipe combines the flavor of cookies with the delicate texture of amaretti, resulting in a cake that will impress every time. Additionally, it is a simple recipe that is easy to follow, yet has a remarkable visual and taste impact.
Ingredients:
For the base:
- 200 g cookies (preferably cocoa cookies)
- 100 g amaretti
- 100 g almonds (raw)
- 100 g melted butter
- 2 eggs
- 100 g sugar
- A pinch of salt
For the filling:
- 300 g cream cheese (at room temperature)
- 150 g whipping cream
- 50 g powdered sugar
- 1 teaspoon vanilla extract
Instructions:
1. Preparing the bases: Start by preheating the oven to 180°C. In a food processor, crush the cookies and amaretti until you get a fine crumb. If you don’t have a food processor, you can use a plastic bag and a rolling pin to crush them manually.
2. Almonds: Place the almonds on a baking sheet and roast them for 5-7 minutes until golden and fragrant. Let them cool, then finely grind them using a coffee grinder or a blender.
3. Base mixture: In a large bowl, combine the cookie crumbs, ground almonds, melted butter, eggs, sugar, and a pinch of salt. Mix well until you obtain a homogeneous composition.
4. Baking the bases: Pour the mixture into the cake pans lined with parchment paper (you can use removable bottom pans to facilitate the removal of the cake) and level the surface with a spatula. Bake the bases for 25-30 minutes or until firm to the touch. Let them cool completely.
5. Preparing the filling: In a clean bowl, whip the cream until it becomes firm. In another bowl, mix the cream cheese with the powdered sugar and vanilla extract until creamy. Gently fold in the whipped cream into the cheese mixture using a spatula to maintain the airiness.
6. Assembling the cake: Place one base on a serving platter, spread some of the cream cheese mixture, then place the second base on top. Cover the entire surface of the cake with the remaining cream, leveling it well.
7. Chilling: Leave the cake in the refrigerator for at least 2 hours before serving, so the flavors combine perfectly.
Practical tips:
- For an extra flavor, you can add a little lemon zest to the cream cheese.
- If you want to personalize the dessert, replace the almonds with pecans or pistachios for a different texture.
- You can decorate the cake with fresh fruits like raspberries or strawberries for a contrast of colors and flavors.
Serving: Cut the cake into generous slices and serve it alongside a glass of sweet wine or aromatic tea. Gateau Royale will surely become the star of your festive evenings!
