Chicken Ostropel with Pasta and Green Beans

We start the recipe by thoroughly washing the chicken thighs, making sure to remove any impurities. After washing them, we dry them with a paper towel to eliminate excess water that could prevent even frying. In a deep pan, we heat the oil until it becomes hot, then add the chicken thighs. We fry them on all sides until they turn golden and crispy, which will add a pleasant texture to the dish. Once the thighs are fried, we remove them from the pan and keep them warm on a covered plate so they do not cool down.

In the remaining oil, we add finely chopped onion or alternatively, grated onion. It will sauté, releasing its aroma into the oil. When the onion becomes translucent, we deglaze everything with dry white wine, which will add a note of acidity and help deglaze the pan. Immediately after, we add chicken broth or water, thus completing the base of the sauce. The next step is to add diced potatoes and green beans, both essential ingredients to provide consistency and nutrients to the dish. We cover the pan and let it simmer for 15-20 minutes until the vegetables soften.

After the vegetables are cooked, we add tomato paste diluted in a little water, along with the fried chicken thighs. We cover again and let it simmer for about 10 minutes, or until the meat becomes tender and easily pulls away from the bone. Towards the end, we season the dish with salt, pepper, and paprika, adjusting the flavors to everyone's taste.

Alongside this dish, we boil the pasta according to the package instructions. Once ready, we rinse it under cold running water to stop the cooking process, then keep it warm. When everything is cooked, we add the pasta to the pot with the thighs and vegetables, letting it boil for a few moments for the flavors to combine perfectly. Finally, we add the crushed garlic, cover the pot, and wait 1-2 minutes for its aroma to integrate into the dish. We serve this delicious main course hot, enjoying the savory combination and comforting texture. It is a perfect meal for any occasion!
