Apple Pie

To prepare a delicious apple pie, we will start by ensuring we have all the necessary ingredients at hand. In a large bowl, we will add 300 g of flour, 100 g of sugar, a pinch of salt, and 150 g of butter cut into cubes. These ingredients will form the base of our dough. Using our hands, we will mix the butter well with the flour, sugar, and salt until the mixture becomes sandy. This is an important step as the butter needs to integrate perfectly into the flour, giving the dough a fine texture.

Once we have achieved this consistency, we will gradually add 1 egg and 50 ml of cold water, continuing to knead until the mixture becomes a homogeneous dough that easily pulls away from the sides of the bowl. Once we reach this stage, we will form a ball from the dough, wrap it in cling film, and let it rest in the fridge for 30 minutes to firm up and be easier to handle later.

In the meantime, we take care of the apples. We will peel 4 large apples, preferably Golden or Granny Smith, and slice them thinly. These slices will be flavored with the juice of one lemon, 100 g of sugar, and a teaspoon of cinnamon, and for added flavor, we will also add the grated zest of one lemon. We mix the apple slices well with the flavoring ingredients so that each piece is evenly coated.

After the dough has rested, we take it out of the fridge and divide it into two parts, one slightly larger than the other. Using a rolling pin, we roll out the first part of the dough into a thin sheet, which we will place in a 24 cm baking dish that we have greased and floured. It is important for the dough to slightly exceed the edges of the mold, as it will support the apple filling.

On top of the dough base, we evenly distribute the apple slices, adding a few pieces of butter on top for a richer taste. Then, we will roll out the second sheet of dough and carefully place it over the apples, sealing the edges to prevent the juices from leaking during baking. With a knife, we will make a few thin cuts on the surface of the pie to allow steam to escape during baking. We brush the top with a beaten egg and sprinkle a little sugar, which will form a golden and crispy crust.

The pie is placed in a preheated oven at 180 degrees Celsius for about 40 minutes, or until it becomes golden and appetizing. It is important to monitor the baking time, as every oven is different, and in some cases, it may be necessary to leave the pie for even more than an hour. Once baked, we let the pie cool slightly before cutting and serving it, so the flavors settle perfectly. Enjoy it warm, alongside a scoop of ice cream or a vanilla sauce!
