To prepare a delicious pasca, the first essential step is to drain the cheese well. I recommend putting it to drain the night before in a colander lined with double cheesecloth, making sure it is suspended above a bowl. This allows the whey to drain completely, ensuring that the cheese will have the ideal texture for preparation. Place everything in the refrigerator, where it will stay until the next day.
The next day, take the cheese and pass it through a sieve, using a wooden spoon to achieve a creamy consistency. In a separate bowl, mix the eggs with the sugar, flour, and baking soda. Then, add the raisins, which you have selected, washed, and previously sprinkled with rum essence to give them extra flavor. Once the mixture is homogeneous, pour the first layer into the prepared pan, lined with baking paper.
For the second layer, treat the sour cream in the same way as the cheese. Beat the egg yolks with the sugar until they become a white and fluffy cream. Sift the flour together with the semolina, baking powder, and cocoa powder, then mix them with the egg yolk cream. Add the well-drained sour cream and gently mix to maintain the air in the composition. Pour this second layer into the pan and bake in the preheated oven at moderate to low heat, baking for 45 minutes.
While the first and second layers are baking, prepare the third layer. Beat the egg whites until stiff peaks form, gradually adding the sugar until you obtain a glossy meringue. In this meringue, carefully incorporate the ground walnuts and coconut, using a spatula or spoon to avoid losing air. Pour this meringue layer over the other two layers and continue baking for another 15 minutes, until the meringue turns slightly golden.
After you finish baking, let the pasca cool in the pan in which it was baked. Once it has completely cooled, transfer it to a round platter.
