Breakfast Cake with Nuts and Cocoa
We start by preparing the necessary ingredients for this delicious recipe. You will need two fresh eggs, sugar, soft butter, water, and your favorite ingredients to add flavor. Make sure the butter is at room temperature for easier incorporation into the mixture.
In a large bowl, place the two whole eggs without separating the egg whites from the yolks. Add the sugar and mix well with an electric mixer until the mixture becomes frothy and light yellow. This is the stage that will give the cake an airy and light texture. Continue mixing, adding the soft butter, which will melt into the egg and sugar mixture, creating a creamy base.
After the butter has been well incorporated, gradually add the water and the other dry ingredients, such as flour, baking powder, and a pinch of salt if desired. Mix again with the mixer, but do not overdo it; it is enough to obtain a homogeneous mixture. At this point, you can think about additional flavors – you can add a little vanilla, lemon zest, or even cocoa, depending on your preferences.
Prepare the baking pan. Choose a 26 cm pan, greasing it with butter and lining it with flour or baking paper. If you want a taller cake, opt for a smaller pan or muffin molds, where the mixture will bake evenly, and the cakes will be nicely portioned.
If you like, you can decorate the cake with walnut pieces, thin slices of pear, or other seasonal fruits, adding a splash of color and texture. Carefully pour the mixture into the pan, smoothing the surface with a spatula.
Preheat the oven to 180 degrees Celsius. Once the oven is well heated, place the pan inside and bake the cake for 20-25 minutes. It is important to check the baking using a toothpick, which should come out clean from the center of the cake. After it is done, let it cool slightly before removing it from the pan.
