When fresh nettles appear, I usually make this simple dish. Every time I come home with half a bag full and I already know how I'm going to cook them. I don't weigh the nettles, I use as much as I have. You don't need many ingredients and the result is just what you need for a lunch or a quick dinner, with warm polenta.

Ingredients

- about half a bag of fresh nettles (as much as you have, no need for a fixed amount)
- 1 small onion, finely chopped
- 3-4 cloves of garlic
- 1 tablespoon of sour cream
- salt
- pepper

(optional for serving: polenta and boiled egg, to taste)

Preparation method

1. Clean the nettles. Remove the thick stems and damaged leaves. Keep only the leaves and tender tips.
2. Wash the nettles very well, in several cold waters, until no grain of sand remains. If you have a lot of nettles, work in batches.
3. Boil a pot of water with salt. When the water boils, add the nettles and let them cook for 5-10 minutes, until softened.
4. Remove the nettles with a slotted spoon and let them drain in a colander. Do not throw away the water they boiled in yet, if you need to thin the mixture later.
5. In a small pot, add a little oil (or lard, but I stick to oil when I’m vegan) and sauté the finely chopped onion over low heat until it becomes translucent.
6. Add the well-drained nettles over the onion. Chop them beforehand if the leaves are large, but it's not mandatory.
7. Keep on medium heat for 8-10 minutes, stirring occasionally. The mixture should thicken a bit, not be watery. If it seems too dry, you can add 1-2 tablespoons of the boiling water.
8. Add the sour cream. Mix well. Let it sit for another 1-2 minutes to homogenize.
9. Season to taste with salt and pepper.
10. Crush or finely chop the garlic cloves and add them towards the end, after you've taken the dish off the heat.
11. Serve the nettle dish warm, with polenta and, if desired, a boiled or poached egg on top.

It’s quick to make, the ingredients are few and inexpensive, and the nettles have that specific spring taste. If you have them on hand, the recipe is easy and doesn’t require complicated techniques. I like that it easily adapts based on what I have in the fridge.

Tips

- Use gloves when cleaning and washing the nettles, so you don’t get stung.
- The water from boiling the nettles should not be thrown away immediately. You can use it if the dish seems too dry.
- If you want a smoother consistency, chop the nettles after draining them. If you like larger pieces, leave them as they are.
- Always taste before adding sour cream, to adjust the salt and pepper at the end.

Substitutions

- Sour cream can be replaced with thicker yogurt or omitted for a vegan version.
- White onion can be replaced with green onion, especially at the end of spring.
- Oil can be replaced with butter if you’re not vegan.

- For a thicker texture, you can add a tablespoon of flour when sautéing the onion, but I prefer the version without.
- You can add a few leaves of ramsons or spinach if you want to vary the taste.
- If you don’t like raw garlic, you can sauté it very lightly with the onion at the beginning.

3. Should the water from boiling the nettles be thrown away?
Not necessarily. It can be used to thin the dish if needed. Some consume it as a clear soup, but that depends on taste.

4. Can it be prepared a day in advance?
Yes, but the cooked nettles lose some of their flavor and do not have the same freshness. It’s better to consume them the same day.

5. Can other greens be added?
Yes, you can add spinach or ramsons leaves for a slightly different taste, but the basic recipe only works with nettles.

The nettle dish can be stored in the refrigerator, in a closed container, for a maximum of 2 days. When reheating, if it seems too dry, add a little boiling water or milk. I do not recommend freezing, as the texture becomes too soft. It is best consumed fresh, shortly after it has been made.
