Vegetable Meatballs with Celery and Corn
Zucchini is a versatile ingredient, ideal for creating delicious and healthy dishes. We start by washing the zucchini well under a stream of cold water, making sure to remove any impurities. After cleaning it, we use a large grater to shred it, keeping the skin intact, as it adds not only color but also nutrients. Once grated, we place the zucchini in a bowl and let it rest for a few minutes to release its juice. This step is crucial, as excess water could make the mixture too soft.
Meanwhile, we take care of the other ingredients. The onion is finely chopped, ensuring we get small, uniform pieces that will integrate perfectly into the mixture. The carrot and celery are also grated, adding a pleasant texture and a sweet aroma. After preparing all the vegetables, we transfer them to a large bowl, along with the well-drained zucchini.
