To prepare a delicious and aromatic recipe of stuffed onions with rice and meat, we will start by peeling the onions. It is important to choose the largest and healthiest ones so that we can fill their cores without damaging them. After peeling, we will remove the core, leaving only 2-3 layers on the outside to maintain their shape and facilitate filling. To soften the onions and make them easier to fill, we will blanch them in boiling water for about 5-7 minutes. This step will also help eliminate the bitterness from the onion.

Meanwhile, we will take care of the rice. We will wash the rice under a stream of cold water, then boil it according to the instructions on the package. Once cooked, we will drain it and let it cool completely. The rice will be the base of our filling, and its texture will add consistency to the dish.

In a large bowl, we will combine the cooled rice with minced pork or beef, depending on preferences. We will add spices to taste, such as salt, pepper, paprika, and herbs like dill or thyme. We will also add chopped fresh parsley, which will give a fresh taste and a touch of color. The mixture will be well homogenized so that each portion of filling is full of flavor.

Now we will move on to filling the onions. Carefully, we will take each blanched onion and start filling it with the rice and meat mixture. It is important not to overfill the onion, as the filling will expand during baking. After filling all the onions, we will place them in a baking dish, which we will drizzle with a thread of olive oil to prevent sticking and add a rich flavor.

The dish will be placed in the preheated oven at 180 degrees Celsius for about 30-40 minutes, or until the onions become golden and tender. When they are ready, we will carefully take them out of the oven and finish the dish. With a sharp knife, we will carefully remove the top part of each onion, and inside we will add finely chopped tomatoes, which will bring an extra acidity and freshness.

To finish, we will sprinkle grated cheese on top, which will melt slowly, providing a delicious and creamy layer. We will put the top back on the onion, allowing the cheese to melt in the oven for another 5-10 minutes. Thus, the stuffed onions will be not only tasty but also appetizing, ready to be served alongside a fresh salad or a side of sautéed vegetables.
