To prepare delicious pancakes, we start by heating the milk together with the butter in a saucepan over low heat. It is essential to ensure that the butter melts completely, but avoid bringing the milk to a boiling point. Once the butter has melted, we let the mixture cool slightly, being careful not to let it sit too long, so as not to lose flavor. In the meantime, we can take care of the dry ingredients and the other components needed to achieve a fine and airy batter.

In a large bowl, we begin to whisk the eggs with the sugar until the mixture becomes frothy and a deep yellow color. This is the stage where the sugar will dissolve, and the texture will become airy. We gradually add the flour, mixing with a whisk to avoid lumps. It is important to mix well so that the flour is perfectly incorporated into the mixture. At this point, we can also add our favorite flavors - vanilla essence or lemon zest are excellent choices that will enhance the taste of the pancakes.

After achieving a homogeneous mix, we slowly pour in the warm milk, ensuring that it is not hot, so as not to coagulate the eggs. We mix slowly with the whisk until the batter becomes smooth and even. Now, we are ready to start frying the pancakes.

We heat a non-stick pan and lightly grease it with oil, making sure it is well distributed. Using a ladle, we take a portion of the mixture and pour it into the hot pan, being careful not to overfill the pan, allowing the pancake to spread evenly. With circular motions, we spread the batter in the pan, achieving a round shape. We let the pancake brown, watching as the edges begin to lift from the pan. When the bottom is golden and nicely browned, we flip the pancake with a spatula, continuing to cook it on the other side.

Once all the pancakes are ready, we can serve them with various fillings. Your favorite jam, sweet cottage cheese, or chocolate cream are just a few of the delicious options. Add fresh fruits or nuts for an extra texture and flavor. Enjoy your meal!
