Chicken with Gorgonzola Sauce
Ingredients: -3 hammers -50g butter -170g sweet gorgonzola -salt -600ml water
To prepare a delicious dish of chicken thighs, the first step is to take care of the meat we will use. The thighs are cleaned of any impurities, washed under a stream of cold water, and dried with a paper towel to remove excess water. This detail is important as it helps the meat to fry evenly and develop a nice crust. Once we are done preparing the thighs, we set them aside to take care of the other ingredients.
In a large skillet, we add the butter and leave it over medium heat until it completely melts and starts to foam. The aroma of melted butter is a sign that we are almost ready to add the thighs. We carefully place the meat in the skillet, ensuring that each piece has enough space to fry properly. We leave them on the heat for a few moments until they take on a golden hue on both sides, which will enhance the flavor.
After the thighs are nicely browned, we add 200 ml of water to the skillet and let the meat simmer, covering the skillet with a lid. It is important that the heat is medium so that the water does not boil too quickly, and the meat has time to tenderize in the formed sauce. As the water decreases, we continue to add 200 ml at a time, repeating this process. In total, I used 600 ml of water, but if you notice that the thighs are firmer, do not hesitate to add more water until the meat reaches the desired consistency.
Once we have added the last portion of water, we let the sauce reduce until it reaches half its volume. This is the perfect time to add gorgonzola, the cheese with an intense and creamy flavor that will transform our dish into a real delight. We mix well, allowing the cheese to completely melt into the sauce, thus enriching the flavor of the thighs. We keep the skillet on the heat for a few moments until the meat is well covered by the creamy sauce.
Once the dish is ready, we can serve it warm, alongside side dishes that perfectly complement this main course. Rice or mashed potatoes are excellent choices, absorbing the delicious sauce. Enjoy your meal!
