Delicious Baked Fish with Vegetables Recipe

Ingredients:
- 3 fish (preferably mackerel, but you can also use sea bream or perch)
- 2 medium onions, sliced julienne
- 1 bunch of cherry tomatoes, halved
- 0.5 kg root vegetables (1 carrot and 1 celery)
- 2 bunches of fresh parsley
- 1 bunch of fresh coriander
- 2 bay leaves
- 1 teaspoon ground pepper
- Salt, to taste
- 1 lemon, sliced
- 1 glass of white wine
- ½ glass of olive oil
- Water, enough to cover the vegetables

Instructions:

1. Preparing the vegetables: Start by cleaning and washing all the vegetables. Slice the carrot and celery into thin rounds. Julienne the onion and halve the cherry tomatoes. Place the vegetables in a pot with water and a little salt, cover with a lid, and let them boil over medium heat for about 10-15 minutes, until they become slightly soft.

2. Preparing the fish: Meanwhile, preheat the oven to 180°C. Portion the fish (mackerel) and season it with salt and pepper, both inside and out. If you want extra flavor, you can add lemon slices inside it.

3. Assembling the dish: In a baking tray, add the olive oil and evenly place the boiled vegetables on the bottom of the tray. Then place the fish on top of the vegetables. Add ½ glass of the liquid in which the vegetables boiled and the cherry tomatoes on top of the fish.

4. Baking: Place the tray in the oven and let the dish bake for 30 minutes. After 30 minutes, pour the white wine over the fish and carefully turn it to brown evenly on both sides. Continue baking for another 15 minutes.

5. Serving: Once the fish is browned and the vegetables are tender, remove the tray from the oven. Garnish with chopped fresh parsley and coriander. You can serve the dish warm, alongside a fresh salad or a side of plain rice.
